Fresh Guacamole

Ingredients
- 1 cup tricolour cherry tomatoes, diced
- 1 scallion, diced
- 1/3 cup pickled hot banana peppers, diced
- 2 tbsp brine from the banana pepper jar
- 1/3 cup chopped cilantro
- Salt and pepper
- 4-6 ripe but firm avocados, cubed
- Juice from a fresh lime

Finely dice all ingredients so the guacamole is chunky, but still easy to dip with tortilla chips.

Mix all ingredients together, adding the avocados last, closer to serving time, so they don’t turn brown.

Taste and add more lime juice, brine, cilantro, or salt and pepper as desired.

Lime juice adds brightness and helps keep guacamole fresh and green.

Serve with crispy and salty tortilla chips.

Cover tightly and refrigerate any remaining guac so that it can stay green for the next day.
