Garlic Butter Chicken Bites and Asparagus

Ingredients
- 3 chicken breasts, boneless and skinless, cut into bite-sized pieces
- 2 bunches of asparagus, cleaned and trimmed
- ½ cup butter, divided (¼ cup for chicken, ¼ cup for sauce)
- 1 teaspoon olive oil
- 2 teaspoons minced garlic, divided
- 1 teaspoon Italian seasoning or Herbes de Provence
- 1 tablespoon hot sauce (optional; Sriracha was used)
- ½ cup (125 ml) low-sodium chicken broth
- Juice of ½ a lemon
- 1 tablespoon minced parsley
- Optional: crushed red chili pepper flakes
- Lemon slices for garnish

Prep Ingredients: Cut chicken breasts into bite-sized pieces. Clean and trim asparagus. Mince garlic and parsley.

Cook Chicken: In a large skillet, melt ¼ cup of butter with 1 tsp olive oil over medium-high heat. Add chicken, 1 tsp garlic, and Italian seasoning. Sauté until golden and cooked through. Remove from pan and set aside.

Cook Asparagus: In the same pan, add the remaining ¼ cup of butter, 1 tsp garlic, and asparagus. Sauté for 3–4 minutes until tender-crisp.

Make Sauce: Add hot sauce (optional), chicken broth, and lemon juice to the pan. Stir and simmer for 2–3 minutes to blend flavours.

Combine and Garnish: Return chicken to the pan. Add minced parsley, crushed red pepper flakes (optional), and lemon slices for garnish. Serve hot!
